I don't like fruit cake but my husband loves it. I gave little fruit cakes to close friends who do not like fruit cake and they also like this recipe. This is an easy recipe to make. Great for substituting. I couldn't find Apricot nectar so I used Peach nectar. I didn't have dates so I used a large container of candied fruit. The glaze is very good on the cake. Recipe is expensive to make. Try to buy ingredients on sale. I will be making this recipe again.

We Cut Out the DatesDecember 12, 2009 By cynwbonner
We changed the recipe just a tad. Neither of us like dates, so we put in more fruit and cut the dates. We used two cups of candied mixed fruit instead of the specific fruits and the dates. Also we used pecans instead of walnuts. The cake turned out perfect. After we turned the cake onto a cooling rack, we placed pecan halves all over the top. We mixed the glaze right then, using a half cup of powdered sugar and three tablespoons Apricot Brandy, so it was a thin drizzle. We poured this all over the rows of pecan halves to sort of stick them down. After several hours, we cut the cake and both us of agreed: This is the best fruitcake we've ever tasted.

I made this cake today, because it looked so easy. I was not disappointed and neither was my husband who isn't a fan of fruitcakes, but I am. I've never met a fruitcake I didn't love, but this one is the best I've ever eaten. I didn't use brandy, just used more apricot nectar instead. I didn't glaze it, but it doesn't need the extra sugar--it's rich enough as it is. I did figure out it cost me about $16 to make it. Try to get your ingredients on sale and you'll do better than that.

I made this cake last Christmas, and preparing to make it again this year... This the BEST fruit cake I have ever eaten, and the best one I have ever made!
