Mustard Greens With Ham

Recipe is excellent...I would suggest that you boil a hot pepper, lemon, 1/4 cup of brown sugar (or a 3 inch stalk of sugar cane) and chicken bullion with the ham bone while you saute the onions (I prefer shallots, but that's not really southern; use a yellow onion as it's sweeter). Once the water boils, pull the pepper and lemon before adding the greens. Once the greens cook down -- drain, pull the ham off the bone and stir in the shallots. Yum! --from a daughter who learned at the elbows of damn-fine Alabama and Virgina cooks, how I miss them both
