Cheese and Bacon Cornbread

This easy cornbread is made with a corn muffin mix. The addition of cheddar cheese and bacon give the cornbread extra flavor and texture.

Ingredients

  • 1 package corn muffin mix

  • 1/2 cup sharp cheddar cheese, grated

  • 6 slices crispy bacon, crumbled

  • 1 large egg

  • 1/3 cup milk

Steps to Make It

  1. Empty corn muffin mix into a medium mixing bowl. Save about 1 tablespoon each of shredded cheese and bacon for topping; stir remaining cheese and bacon into muffin mix.

  2. Stir in egg and milk, following label directions. Pour batter into a greased and floured 8-inch square baking dish.

  3. Bake at 400 F for 15 minutes; sprinkle reserved cheese and bacon over top and bake 10 minutes longer, or until cornbread browned and firm.
