I added about 1/4 C. of sugar, some black pepper and about 1/2 C. frozen corn. Then it baked in a 9"" pyrex dish. THEN it came out tasty! All it needed was a little extra oomph.

I chose this because I had the ingredients on hand. I had never made cornbread before, and I was used to Jiffy cornbread mix, so when I made it, I was shocked that it was not sweet at all. (Of course, the fact that there was no sugar in the recipe should have cued me in!) I sopped it in a little bit of maple syrup and the sweetness really complemented the bread. My husband grew up with homemade cornbread, and he said it wasn't bad.

When I saw ""quick"", I made the mistake of trying this recipe. It was actually not that quick, since measuring all the ingredients took longer than it would have to open a box of premix cornbread. And it turned out to be very dry and tasteless. After two bites, I tossed the entire pan. Next time I'm sticking to the quick premix boxes, or else take the time to do a nice recipe that uses a little sugar and buttermilk and maybe even bacon grease or cream of corn. Anyone who tries this recipe will be very disappointed!

Try adding some cracked black pepper (1 tsp), diced red or green capsicum (about 3/4 cup) and 1 - 11/2 cups of grated cheese and it tastes way better. I know it's a huge variation on the original, but it works. Oh and I used fine ground cornmeal instead of stone ground, wouldn't have a clue if there is a difference, but the end result is fantastic.

this cornbread although simple and easy to make was awful. it was flavorless and the top layer was hard as a rock. for the amount of corn meal added it has very little corn flavor, i would not recommend this recipe to anyone.
