Boston Baked Beans
2 out of 5Pre-boiling the soaked beansMay 23, 2009

I used Navy beans and followed the recipe perfectly except that the time the recipe required (45 minutes) for pre-boiling was way too much. I took the kettle off the stove after 25 minutes and the beans were soft and mushy. I will try this recipe again and not boil the beans for more than 15 or 20 minutes. That way they should not be mushy. Perhaps the beans don't need to be soaked overnight if they are to be pre-boiled for 45 minutes. i soaked them overnight.
1 out of 5baked beans w/ molassesMay 09, 2009

WAY too much molasses for a lb of beans. they will be black. and between molasses n sugar, WAY too sweet. you MUST first soak beans over nite w/ a little baking soda, then simmer next day for about 20 min. cut molasses to 1/4 cup and brown sugar is optional or according to taste. a cup is a lot. cook in slow oven (200-250) or crockpot. takes around 9 hours, or longer, depending on your crock. i add salt pork, leave out the salt in this recipe. i dont use worchester either.
