I enjoyed this recipe for many reasons...first of all the ingredients were few and simple (things we always have on hand). Living in the mountains, (especially in winter) it is nice to be able to make these things without the hour long drive to town for supplies :) Second, I love using my crock pot! And because it cooked all day...the meat fell right off the bone. When i first tried it, i thought it was a little bland...then i realized i didnt add any spices...so a little dash of salt and pepper did the trick! With the leftovers you can add a little bbq sauce (or other flavored sauce you prefer) and make pork sandwiches. Yum!
