Tami's Vegetable Beef Soup

This was the best vegetable beef soup my wife and I have ever had, including restaurants. We did make a few changes in adding more chopped onion and an additional half lb. ground chuck. Also, we used broth instead of water and added 1 more cup. We used a split between low sodium beef and chicken broth.

Overall, the recipe was good, but I found that the tomato base was too watery with no real flavor. I added a large jar of Ragu pizza sauce and it made all the difference.

Simple with little change - added soup bones with a lot of beef (get thru processor) Did not peel potatoes. When I put in beef added a small amount of sea salt and garlic powder. This was great first time but re-done as a leftover with grilled cheese sandwiches was fantastic. Will definitely do it again.

Compulsion to read recipes, print them and comment is not a good thing at age 80. This is similar to ""900 other soups"" I've made. It isn''t rocket science. Keep a reezer full of homemade stock of all kinds--you'll never go wrong. It''s worth doing if you really NEED a recipe to make soup.
