When it comes to meal prep, especially around the holidays, freeing up stovetop or oven space can seriously help matters. These crockpot sweet potatoes are sliced and cooked with brown sugar and cinnamon (of course) and develop a caramel-like glaze. The cinnamon adds just the right amount of spice to the brown sugar sauce.

While these cook away all day, your oven is free for whatever else you need to use it for, such as the turkey or ham.

Ingredients

  • 2 tablespoons unsalted butter, plus more for buttering slow cooker

  • 4 to 6 medium sweet potatoes, about 2 1/2 to 3 pounds, peeled and sliced

  • 1/2 teaspoon salt

  • 1 cup brown sugar, packed

  • 3 tablespoons cornstarch

  • 1 teaspoon cinnamon

  2. Lightly butter the inner sides and bottom of the slow cooker.

  4. Combine sugar, cornstarch, and cinnamon in a small bowl; sprinkle over the sweet potatoes.

  5. Dot with butter. Cover and cook on low for 7 to 9 hours.
