This is a great casserole to bring to any party. I found the ingredients very easy to locate; and the casserole was very easy to prepare. As I didn't want to bring my crock pot to the party; I made it up in a large casserole dish and baked in the oven at 325 for about 2 hours; or just until set. Everyone raved about the dish. I plan on making it again; using smaller casserole dishes so that I can freeze it for my future enjoyment. I would highly recommend this dish for any ""pot luck"" dinner. It isn't too spicy that some people wouldn't enjoy it. I have already passed the recipe along to everyone who was at the party I brought this dish to.

I was asked to bring a sidedish to an office potluck. I wanted something different from the usual green bean casserole and this dish was it! Everyone loved it! I dumped in a little extra salsa, chili powder and cumin and it turned out wonderful. I will certainly make it next time we have a potluck.

I first made this recipe about 5 years ago for a family Christmas potluck. I think 5 people tried it. One of them asked me to make it for Easter. It was one of the first dishes to disappear. Now, I make it for nearly every family party. I double the recipe and cook it for 4-5 hours on low.
