Very TastyNovember 23, 2010 By jkessy
By far the best cucumber salad I have ever made. This is always a big hit with my family and I am about to serve it to 24 Thanksgiving guests.

As expectedNovember 10, 2010 By Mwanza
This dish was a hit and so easy to make. I made it an hour before dinner and had to hasten the cooling process by putting it in the freezer and that worked well.

only the bestJuly 11, 2009 By prettyyummy
I tried this recipe and was very pleased with it. The flavor was sweet and delicious with a refreshing taste. I used 4 english cucumbers with 2 fresh basil leaves out of my herb garden. I will be making this recipe many times in the future. Yummy to the tummy!

Easy and deliciousFebruary 06, 2009 By hmtennant
Very tasty, easy to make. They don't specify, but results much better if you let it sit for 24 hours in the refrigerator. A very popular dish every time I make it.

Cucumbers to pleaseAugust 25, 2008 By PepperCloud
If you are looking for an easy yet satisfying way to prepare cucumbers, this is it! Everytime I serve this for my guests they rave over it and ask for the recipe. The cayanne really sets it apart, giving the dish a light but complex flavor. Also, don't throw away that extra liquid when the cucumbers are finished, as long as it stays refrigerated this vinegar mixture can be reused for weeks! This recipe has been wonderful for the overload of cucumbers that my garden has produced.

    Absolutely fabulous!August 22, 2008 By CarlosDaCosta
This is a wonderfully delicious recipe. However, I changed amounts of some ingredients: 1/2 cup sugar (I'm not partial to sweetness); I used 2 tbsp. each of fresh parsley and basil ( I had it in my garden and saw no reason to use dry, I think ""a dash"" is not enough.) All other ingredients I followed exactly the recipe.

    GreatAugust 03, 2008 By aprylf
I skipped the cayenne and used Splenda and fresh basil. I served it with a meal made with Thai green curry and it was the perfect balance.to the spicy, because I didn't have rice vinegar and fish sauce to make it authentic, but the family loved it, including my Cambodian-born daughter who loves all things cucumber! I also used fresh cukes that a friend gave me. Terrific. Only problem was there were no leftovers.

    yummyFebruary 26, 2008 By Thrifty_girl
I made the cucumber salad last year for my husband's birthday. It was so good that I ate some of it and had to make more. I found that it's best to make this the night before you need it so that the flavors can set longer and soak into the cucumbers. I am making this tonight for a dinner at church tomorrow.

    Fast and Delicious!September 13, 2007 By Mrs.Wood
This recipe was a great way to use the cucumbers from the garden. It was quick and easy. The best part was using some of the cucumbers from the salad for veggie sandwichs. Tip* If using cucumbers for packed lunch sandwichs, be sure to blot each side on a paper towel to avoid a soggy sandwich!

    Refreshing!August 10, 2007 By amsb25
This recipe was a great way to use up our homegrown cucumbers. It was very quick and easy. I used apple cider vinegar instead of white vinegar, and I thought it worked well. The recipe is very cool and refreshing, and it was a perfect side dish when we had friends over for a cookout. I have made the recipe twice, and added cherry tomato halves the second time. I highly recommend this recipe!
