These little cookies are so easy to make. I made them for work and now I get requests for them. I bring them into the pharmacy where I work, and copies of the recipe as well. Even my husband and friends like these delicious cookies. It is a little time consuming rolling them all out. But you could spread them in a rectangle pan, cover with the coconut and cut into 1 inch squares. They do remind me of my mother and grandma McLain's Datenut Balls.
