Blueberry French Toast Bake

I made this along with the Baked French Toast with Brown Sugar Streusel Topping recipe for Christmas brunch. This one was okay, but was not the favorite of the two. I did not care for the cream cheese in this one...it wasn't very creamy. This recipe seemed like it needed a bit more sweetness also. The other recipe was outstanding. I think the Baked French Toast with Brown Sugar Streusel Topping recipe might be good also with a layer of blueberries in between the bread slices in lieu of the struesel topping.

I enjoyed making this recipe but altered it a bit by using old french bread I had on hand. Everything came out wonderfully with the exception of the cream cheese. I'm not a fan of getting a bite full of plain cream cheese so I think I'll tweak the recipe by adding some powdered sugar next time and perhaps spread the cream cheese on each slice of bread. Other than that, the flavors were really good.

I was at VA Tech for my son's freshman orientation, and they served this in the dining hall this morning for breakfast. (BTW, this should not be surprising that such a wonderful and unique dish would be served there since they were rated as having the #1 college dining halls in the country.) It was so wonderful!!! The sauce was as equally wonderful. I can't wait to make myself.

At a recent Sunday brunch at a friend's home she served this Blueberry Casserole made with very light wheat bread. It was outstanding. There were other things on the menu but the blueberry dish got the best raves. Some great champagne and the blueberry sauce would have been all we really needed.
