I used dried parsley instead of fresh and cooked the salmon in oil on the stovetop. It was really moist, tender and flavorful. Thanks for the great recipe!

This was a great dish for salmon. I usually grill salmon but don't like to do it indoors due to the lingering fishy odors. Baking in the oven solves this problem and since it is almost encrusted with the herbs does not have much odor at all while baking. This was just like something you would order in a fine restaurant and my husband, who normally will only tolerate salmon as a healthy choice for dinner, said that he liked it a lot and encouraged me to do again. I will definitely be doing this often.
