I told my boyfriend that I was going to make a ""fruit cake"" for the holidays - well he pitched a fit. I made it anyway and had him try it - he loved it! Now we have to have all the ingredients on hand year round. He tells everyone that it is fruit cake and they can't have any - he eats the whole thing if I'm not careful. Thank you for such a wonderful recipe, it reminds me of my grandmothers fruit cake.

This cake is sooo easy and got big time kudos from everyone I shared it with. I modified the recipe using regular brandy and added a teaspoon of real vanilla extract since I didn't have apricot brandy readily available. You can vary it by adding a little more friut/nuts without messing it up. Everyone (including myself) liked the cake so much I baked another one 2 days later. This is not your average fruitcake. It's different enough that it's not just a Christmas season item. I recommend trying this for your self.
