5 out of 5A Great Go To MealJune 09, 2011

I made this for tonight's dinner and it was a big hit with the family. I put it together with a salad and had it on the table in 20 minutes. I went ahead and made up 8 burritos with the mixture that I had. Very flavorful. This is the kind of food I need on a busy night. And just as good as other fussier burrito recipes.

Since I got a deal on 3 cans refried beans by Rosarita and a lb. of ground beef free, I tried this recipe! Never made these before, but my family just went crazy over it; as did I. Wow, so scrumptous, doesn't describe this. I substituted with a small can of tomato sauce and just put a slice of Kraft 2% cheese slice on the tortilla before folding it. Didn't matter, it was so tasty anyway. My husband put sour cream in his. I don't know how ethnic that was but he said his ws better than mine. So there you have it! Whalla-great!!

This was so great, that I took about a half an hour to research in again in Google. It was easy, tasty, and even my kids liked it. I did get the beans with jalapenos, because we like a little heat. It was awesome. No leftovers.

I made these burritos for a large dinner party of college students. They were filling and tasty. I made a few adaptations and they turned out great. I added additional enchilada sauce on top of the burritos, along with some grated cheese and baked them covered at 350 degrees for 30 minutes (it may take less time if you've followed the quantity in the recipe. I made 20). I froze the leftovers and baked them still frozen (covered) at 350 degrees for about 1 hour with a little water added to the bottom of the pan.
