the basics of this recipe are there - it's just not that interesting. I used skim milk and 1/2 the butter and didn't have any problems. I also added a little minced garlic and used cracker crumbs instead of bread.

So delicious! I agree with a previous reviewer, it is better than Cracker Barrel! I made a double batch of this to take to a brunch with just 4 friends and it was GONE! For any vegetarians out there, I substituted veggie broth for the chicken broth and it worked great. Thanks for the awesome recipe.

1. ""Hash browns"" are always shredded potatoes; ""home fries"" are cubed or chunks in various sizes! 2. This recipe never says when the potatoes go into the casserole. It just says to thaw them. I thaw frozen ingredients seperately, then add to the recipe as appropriate. Logic tells you to add them, but the recipe ought to say exactly when.

Yes! The half and half and green onions make this recipe a keeper. I used the frozen, shredded southwestern flavored hash browns found in the dairy section of the grocery store; these are spicy enough already, so I used only 4 green onions. We eat this as a breakfast side item. We also like to eat this for lunch and dinner it's so good. I have tried other hash brown casserole recipes that were not close to being as tasty as this one. I used a freshly seasoned cast iron skillet to make the roux.

This is one of the best potato dishes I've made in a long time. It's easy and everyone absolutely loved them. I liked the fact that it's the same amount of work wether you're making them for 4 or 34 people. I crumbled ritz crackers and tossed them with butter for the topping, it turns out really good!

I was looking for a recipe like Cracker Barrel's hash brown casserole, but everybody who tries this says it's better. I substitute regular onions for green sometimes, and it works just fine.
