What seems to me to be a persistent error in all of these recipes is the obsessive insistence on removing the pith lest the marmalade taste 'bitter.' Bitter, particularly in grapefruit, is an essential part of the flavor - and to try and eliminate it renders the jam or candied peel flat. insipid and pointless. REALLY! Try it my way and see! Diana, I love making jams. This was my first attempt to making any marmalade. This came out delicious! Thank you for having this recipe for me to use. Although time consuming, it was really worth it. One of the best tasting marmalades I have ever had. Doli
