What seems to me to be a persistent error in all of these recipes is the obsessive insistence on removing the pith lest the marmalade taste 'bitter.' Bitter, particularly in grapefruit, is an essential part of the flavor - and to try and eliminate it renders the jam or candied peel flat. insipid and pointless. REALLY! Try it my way and see!
