I'm vegan so I used a Rice-based vegan cheddar block (by Galaxy foods) which I grated and used a mixture of Earth Balance and Smart Balance Light for the butter. I used Almond milk (unsweetened). I followed others' recommendations and used almost 2 cups of shredded cheddar. It tasted great, really creamy. I wanted something super fast and this fit the bill. I did add some onion powder, garlic powder and cayenne pepper. Great comfort food.

This definitely needs some kind of spicing up. Add tuna, or garlic, or (boiled/steamed) broccoli, or all of the above. Or serve it as a side dish. Just add SOMETHING flavourful. On its own, this Mac & Chz is boring. And like others have said, it needs more cheese. Maybe parmesan would cheese it up better than additional cheddar. Haven't tried, though. But as a base, yes, it's quite good. Try stiring the paprika into the sauce for a nicer colour.

I don't think 8 ounces of raw noodles makes 5 cups of cooked macaroni. I think it came out to more like three cups. I made this for Thanksgiving dinner and was very disappointed.

multiply everything there by 4 except 14tbsp of flour and six cups of milk. also try and go for large elbows. we used 4 cups of shredded cheddar cheese, 2 cups of shredded pepper jack cheese and half a stick of velveeta.was more than perfectly cheesy but could always add more. one pound of cook baked. stir all together as the recipe calls for. Add bacon into cheese mix immediately before pouring over past. use a ladle to mix pasta and cheese/bacon in an ezfoil roaster pan 20lb capable size. spread some cheese on top add bread crumbs, use discretion add just enough for a thin layer. 350 for 20, then take it out for a second and put the oven on low broil and put back in on broil rack for 2 minutes. This was absolutley amazing and fed 5 college kids for a dinner, a lunch, and even a good amount for a 2nd dinner. *it ain't easy bein this cheesy.

This was a good basic recipe! I didnt have enough milk so I did half milk half chicken broth...turned out great! Gave it a little more flavor...

This recipe was great the first time we made it, but the second time we decided to take it a step further and it was AMAZING! We ended up adding cooked spinach, diced tomatoes, and some chopped mushrooms and it was delish. Even my sons (who normally despise anything with veggies) came back for seconds!

I recommend 2 cups of cheese and about 4 ounces of Velveeta. It makes it creamier and yummy. It was quite a hit at our family gathering yesterday.

I made the white sauce with Wondra and 1% milk but with 4 tbs. of really good butter (kerrigold) then I doubled the cheese. I used about half a box of penne cooked al dente. Topped with lots of breadcrumbs and paprika. Didn't have the dry mustard but this recipe tasted great.

My son and I grabbed the recipe quick without thinking about it too much. It was easy to make, but I agree with the other reviews - add more cheese man! If you're going to eat Mac and Cheese, might as well do it up right. My son gives it 4 stars, and that's from someone who only eats Mac and Cheese from a box. Solid comfort food.

I made this recipe and followed it exactly. The cheese sauce was dull, with not nearly enough cheese. Also, 5 cups of macaroni is enough for the neighborhood, so I had a LOT of boring mac n cheese. I froze it, planning to doctor it up in the future, with velveeta, which I didn't originally want to use.

OMG! this recipe was AMAZING! i dont usually cook at all.... but this macaroni and chesse was the best i have ever had! the sauce was delicious!! all i would defientley recommend is to add more CHEESE to make it more creamy and thick. Instead of 3/4 cup of grated cheese, i added 2 cups of grated cheese. and it came out perfect!

I'm a chef, and have made so many complicated and very tasty macaroni and cheese recipes. This one hands down is the best! I say this becuase it is so versatile. I use it as a base and make it as gourmet as i want for an older more sophisticated palate of guests, or use half velveta and half cheddar for my son who loves that style. I would definitely double the cheese in the recipe, and I also saute about 1/4 onion in the butter/flour mix. These I strain out after adding the milk. Otherwise you could leave them in if it's your desire. But that's the thing, you can adjust his recipe to what you like and it will be the best Mac n' cheese EVER!

Thank you for this recipe. I was searching everywhere for something nice and simple. I lost my old recipe during a move. Everything else had too much stuff in it. I do blend in squash for the extra vitamins for my little one but, that's it.

I've made macaroni and cheese this way from the very beginning - it's the only way my mother ever made it, so that's the way I learned to make it. It's a great recipe, but be certain to only use whole milk. If you use low fat or skim milk, there isn't enough milk fat to thicken the sauce, and it will separate when you bake it. Whole milk solves the problem. Excellent recipe - it's my ultimate comfort food!

I really liked this recipe. As with the other reviews, I doubled the cheese. I also would use Wondra next time instead of just ""flour"". I thought the sauce was a little grainy and the Wondra would remedy that.

probobly the best macaroni and cheese ive had in my life. i used whole milk and doubled the cheese. i also put layers of sliced cheese along with the cheese sauce. at the end i put a layer of sliced cheese on the top, and broiled it until the cheese became crispy

This macaroni Dish made the Grade in my boys elementary school, where I served 100 children this dish for lunch. They loved it. I addded more cheese and milk to make it creamier. They came back for second helpings!!

I'm planning to make this recipe again tonight as the base for a tuna noodle casserole. When I made it a week ago, I added Monterey jack cheese and garlic powder (doubling the amount of cheese called for), and my boyfriend has been begging me to make it again ever since. He said, 'You bring this to a potluck and it would kill; people would talk about it for a week!' And that's what he's been doing :) We love nearly every 'southernfood' about.com recipe we've tried, and this one is no exception! Thanks Diane and keep up the good work!

Just made this tonight, very good. I added 1/2 teaspoon of ground mustard, we all like it that way over here. However, I feel the cheese was a little stingy, next time I will double it.
