Meatloaf is a classic American comfort food that millions of people consume on a regular basis because it's delicious, filling, and very easy to make. Many different meatloaf recipes exist, with each household preferring a certain mixture or adding a secret family ingredient. But no matter how it's made, meatloaf is engraved in American hearts and bellies, and our take on it might make you love it even more. A combination of pork, beef, and sour cream makes this recipe moist and perfectly irresistible. Shredded carrots and cracker crumbs add texture and flavor to the mixture, and a simple salt and pepper seasoning enhances the natural flavor of the meat and cream. A quick mix of all ingredients and 90 minutes in the oven is all that you need to sit down and feast on this succulent dish.

We recommend using a 1:1 beef-to-pork ratio in the recipe, as the lean beef benefits from the higher amount of fat in the pork. But if you want to make the recipe using just one or the other, or alter the ratios, the meatloaf will come out as good as the original recipe. Using ground turkey and pork also makes a great dish. Though we kept the seasoning conservative with just salt and pepper, this is a great dish to experiment with and find your perfect combo. Think of taco seasoning, adobo, chili powder, paprika, cumin, or perhaps finely chopped herbs like parsley and cilantro. This is a great template for an easy meatloaf, so you can spruce it up with additional ingredients inside or with sauces or gravies that can go on top. Serve with mushroom sauce, traditional gravy, creamy cheese sauce, or tomato sauce and a side of rice to soak up the tasty liquids.

Serve it with the classic mashed potato side or break the mold by serving your meatloaf with garlic pasta, quinoa, or farro. Use it as the filling of delicious sandwiches, adding creamy sauces to moisten crusty slices of bread. Try it in wraps or tacos, adding avocado slices and pico de gallo. The meatloaf can be made ahead; simply mix and pack in the tin, and refrigerate, covered, for up to one day. Keep the leftovers in an airtight container for up to 3 days, and reheat on a pan with olive oil or in the microwave.

Ingredients

  • 1 pound lean ground beef

  • 1 pound ground pork

  • 1 cup shredded carrot

  • 1/3 cup coarsely chopped onion

  • 1 cup cracker crumbs

  • 1 teaspoon salt

  • 1 dash pepper, or to taste

  • 1 cup sour cream

Steps to Make It

  1. Heat the oven to 350 F. In a large mixing bowl, combine all ingredients. Mix well with your hands until well combined.

  2. Pat the meat mixture into a 9 x 5 x 3-inch loaf pan.

  3. Bake the meatloaf in the preheated oven for about 1 1/2 hours.

  4. Let stand for 10 minutes. Drain off fat and transfer to a serving platter.

  5. Enjoy!
