Ran across this recipe several years ago on About.com. Since then I've noticed it on many foodie websites - a sure sign that it's loved by many and rightly so as far as I'm concerned. My 4 and 5 year old love it, and its so easy to throw together. The horseradish gives it the right touch of spice without being overpoweringly hot. Good recipe.

I watch my next-door neighbor's 5th grader (age 10) after school on Mondays and she is discovering a love for cooking. When she gets home we check out online recipes and find something simple she can put together. We found Ed's Meatloaf and due to the simple ingredient list, we had everything it needed without a trip to the store. Less than 10 minutes to prep. My husband, toddler and I ate it with mashed potatoes for dinner, and topped it with a tangy barbecue sauce as we love a little spice on everything. The meatloaf was moist and yummy, you could just taste a hint of the horseradish. My husband thought it was lacking something, a little more flavor in the meat he said, but he is also used to meatloaf made with lots of ketchup and brown sugar. I totally loved it and would have given it a 5 if I didn't weigh in my hubby's opinion. Our toddler ate 2 servings even with the horseradish in it. The only thing I would do differently would be to add more horseradish, but that may not be for everyone. Very family friendly meal as is. Nice job Ed.
