My hubby and I enjoyed this recipe very much. The meat was tender, not dry dry at all. We both found the meat to be a bit bland, next time i make this I will double the amount of Cajun spice and add some extra spices, perhaps onion powder and garlic powder. Definitely a great recipe I will be making again!

Ok- I hate meatloaf because I have only had my mom's meat, ketchup, and onion standby. i have been married for a couple of years, and I am trying to make things for my man that he likes. This meatloaf is AWESOME! I've made it once without the red pepper. I forgot to pick one up, and the meatloaf was good without it. However, the second time I made it with the red pepper, and it is what really adds so much flavor! My husband thinks I am becoming an incredible cook. This will be a keeper at our house for years. THANKS!!

This is such a tasty meatloaf. I have made it several times already and I look forward to making it again soon. You know how everyone in the house will groan when you mention 'meatloaf'? Not anymore!! The red pepper and bacon and bbq sauce put such a wonderful spin on the traditional meatloaf. I have recommended this recipe to many friends and coworkers.

Picky eaters here. . . We no longer put the red pepper in and have significantly cut down the onion and no cajun seasonings. . . The bacon adds so much. . . I add more slices (fresh platter bacon from the butcher - tastes great with the brown sugar). This has become a staple in our house with the adjustments.

This was wonderful!!! I made it for my daughter's family, (five children from 13 to two, and they loved it, and wanted to know when I was going to make it again! The only thing I did different from the recipe was, I used all lean ground beef, and did not add the cajun seasoning, oh and I also used quick cooking oatmeal instead of breadcrumbs. This recipe will be a regular and my house, just like Fried Chicken!
