    I found it better if I diced the tomatoes and added some sweet basil. The okra soaks up a lot of flavor, so a short cooking time is good.

    Quick and tasty recipe. I found it a bit salty; I'd recommend using 1/2 tsp instead, as well as less thyme. I also added more tomatoes which made it all the better.

    I used the homegrown okra and tomatoes that are so abundant now in August. I added a leftover cooked turkey patty chopped up, and served the recipe over cooked brown rice. I think you could add any shredded meat that is leftover, you don't need much, I also used sliced sweet onion because I didn't have any green onions on hand. When I make it again, I will add more onion slivers. My husband doesn't eat okra, and he loved it too, The high heat and short cooking, keeps the slime factor at a minimum. It is a pretty sight as well for those of you who like food to look good. If I had thought about it, I would have taken a photo to put in my recipe file, it was that pretty.
