    This is a good recipe. It has lots of flavor, even though I add serrano peppers , for some more heat. I do have a question. I pierce my okra to allow the vinegar mixture to permeate, and I boil the mixture and allow the okra to sit to burp, so to speak. before cooking. I still end up with lots of head space after the water bath/cook. Should I set the jars in the boiling water, at shoulder depth, with lids somewhat firmly placed and let it heat a bit, then remove the jars and top them off, allowing for the 1/2 inch head space, and then tighten the lid and do my final cook?

    It's an easy enough recipe to make and very flavorful, but the manufacturer of the jars does not know what you'll be putting in them so they can't tell the home cook how long to process in the BWB. Process the jars for 10 minutes if you are below 1000 feet above sea level. Process for 15 minutes between 1001 feet and 6000 feet and 20 minutes if you are above 6000 feet!

    An easy and wonderful recipe. I just made 3 pints as a trial and it was a mistake. The garlic and hot pepper make it a treat for the mouth. Jim
