Oven Fried Chicken
5 out of 5Great -- season it up, + CriscoOctober 03, 2011

Glad I found this tasty, easy recipe. Also happy I followed another reviewer's advice and added garlic powder, a little cayenne, and some oregano too, to lift it all up. I happened to have some Crisco in the fridge so I used that instead of butter. It really came out crispy and like real fried chicken, but a lot lighter.

I made this for dinner last night; I had my doubts when I saw it cooking at such a high temperature. I was pleasanty surprised! The chicken was crispy and very moist! The true test came from my husband - the ""fried chicken connoisseur!"" I couldn't eat my entire piece (I used breasts) and he asked me if he could have the rest of mine also. I said ""well, you must like it."" He said he loved it! I added some garlic powder to the flour but think it could use more seasoning so I may try a little heat next time in addition (chipolte powder or cayenne pepper.) This is definitely a keeper!

As suggested by others, I doubled the amount of the coating and added garlic. I also used a really good brand of chicken. This was wonderful. My husband says I need to add this to the list of weekly meals. I am always looking for recipes that we love to eat.

I am definitely a cooking ""beginner"" (at best) and this recipe turned out GREAT! Some suggestions I do have, however that worked well for me: (1) DOUBLE the amount of the dry ingredients recommended (the flour and spices)...I did not find that the recipe as stated made enough of the coating mix for the 3.5 pounds of chicken that I was making (2) Also add Garlic Powder and Dried Minced Onion to the dry mix (1/2 tsp each if making the recipe as printed, 1 tsp each if doubling) to give a bit more flavor to the coating...other than that, AWESOME! Family favorite! I will definitely make again.

This is awesome to say the least, Easy to prepare, moist & tasty... I did use butter instead of margarine and sprinkled a tad of Emeril Original seasoning on the top, before baking. Your family or company would be really impressed. Don't try oliva oil, doesn't taste the same...

I have been cooking for many years and always fried my chicken in a pan on the stove top. My husband is very fussy about his chicken and I wondered if he would accept this easy method. It passed the test, it is crispy and doesn't taste like baked chicken. So this is the way I will ""fry my chicken"" in the oven from now on. Would be very easy to fix for a crowd.

I can't cook a bit but vowed after completing my masters that I would give my husband a break and try to learn. This was so easy and so good. My husband didn't even know it was fried in the oven not on the stove unitl I told him. He can really cook and thought this was so good. I recommend it to noncooks like myself and those great cooks who want to take a break from the greasy mess frying can make.
