The sweetness of the apricot balances perfectly with the bite of the mustard. I have made this a few times now, and each time I wonder why I don't make it more often! YUMMY

This was so yummy! My kids devoured it. I was a little concerned with the cajun spices, since the sauce had a little kick to it, so I think if you have kids who don't like things that are spicy, then leave it off. I too did balsamic vinegar since I was out of the white vinegar. It was delicious and so easy to make . It's a keeper!

The first time I made this it was amazing. I thought my pick-eater daughter would actually lick the plate. The second time I made it I did not realize (silly me) just how much salt was in the Creole Seasoning. So the Creole seasoning along with more salt made for a REALLY salty dish. My family bravely ate it. I am making it again tonight and will get it right like I did the first time. Yum!

My husband couldn't stop saying how good it was. I didn't even flatten the pork - just sliced it. I also used Balsamic vinegar instead of the white wine vinegar. A very easy, quick and delicious meal.

happened to have all the ingredients at hand, so made this at the last minute. My husband doesn't like pork, but he devoured this. My son told me it was a keeper recipe. We served it with noodles and it was GRE AT.
