Picnic Potato & Egg Salad

We usually make a warm potato salad with a vinegar and coarse ground mustard base, but I was in the mood for a creamy salad with eggs that I have become fond of lately. This recipe hit it out of the park! I made it with Yukon Gold which made it even creamier. My spouse said he really was pleasantly surprised with the mix of flavors, too. He suggested we use green onion next time, which we will try. This is a keeper!!

Have not made potato salad in a while, found this one and LOVE it! So much like Mom made when I was a kid! I am new to the south and tried Duke's Mayo for the 1st time in this and, wow, Super tasty Picnic Potato Salad!

This works just as well without the eggs - and if you like a creamier salad, mash half of the potatoes separately and then add them in. I also like adding slices of carrot!
