Better than Olive Garden!February 08, 2011 By susanlocklear
I have now made this several times, and each time it has been delicious. I have always used sweet Italian sausage and always some variety of spinach, not kale. But I have had success with both fresh and frozen spinach, even frozen creamed spinach! One note about improvising, though, stick to a russet or baking potato. Other types, like red or eastern, just don't work as well in this soup. One other great thing about this soup...it goes together so quickly, you can actually make it after work and still eat at a reasonable time!

really close to Olive Garden's soupMarch 12, 2008 By rgilley123
I made this soup and it is very close to O.G's. I doubled a few ingredients--used a whole 1/2 pint of whipping cream (1 cup) and 7 or 8 cups of water, and 4 cups of kale. Fresh grated parmesan cheese and a little red pepper is good. I will make it again. Thanks!!

Minnesota warm upJanuary 06, 2008 By suewessarb
I have made this recipe many times, always a hit. I use a good chicken broth, kale and bulk Italian sausage. Serve with a good artisan bread.

    Absolutely BrilliantOctober 17, 2007 By Amey1030
My family loved it. I will definitely make this again. I did add a bit of cayenne for extra kick... but even without, this is a great soup.
