Very easy to make. Came out delicious. Cooked in the time the recipe said. Ingredients were easy to assemble: just two steps and two bowls. I really liked the hint of sweetness these muffins had; I felt it distinguished them from cupcakes or cake. (I did not add the sweet topping.) I will definitely make these again.

I love cooking southern food. You can just feel the love in the food-or is that butter...no matter! I did sub some carrots for the pumpkin (about 1/2) and doubled up the recipe. I also used applesause for 1/4th of the butter. I used wheat flour instead of white flour. Turned out fantastic!

I am beginning my search for yummy muffins to make for my daughter to take to lunch in First Grade next fall. It was an idea I got from a friend to send muffins sometimes instead of a sandwich; muffin and a string cheese or strips of ham. I thought pumpkin would be excellent. The plan is to allow my daughter to help so she likes them even more. These fit the bill as there was plenty she could help with and they turned out PERFECT. I had seen other recipes that use condensed milk, oil, one had THREE cups of sugar. Yuck. I made these as written with the following changes: I used skim milk, 2 tsp of pumpkin pie spice as I didn't have one of the other spices, and I added no raisins, nuts or sugar on top. I baked for 21 minutes and they came out moist and JUST sweet enough to be an actual muffin and not a cupcake that some people seem to be looking for in their comments. p.s. my pumpkin puree was generic canned and 15 oz - I don't understand the confusion some are having over the ONE CAN (15-16 oz) in the recipe. A can is a can, not a cup.

....just wondering - maybe the recipe means TWO CUPS (which is 16 fluid ounces) and not a sixteen ounce can. I believe the pumpkin the the can is weighed at 16 ounces (one pound) whereas most recipes call for 16 FLUID ounces (which would be around 1/3 of a 16 ounch can). This would be a reason why some muffins worked out and some didnt. I used a 16 ounce can; whereas I think 2 cups was correct.?????

I changed and added to the spices as follows: 1/2 tsp cinnamon, scant 1/2 tsp ginger, 1/2 tsp nutmeg, 1/8 tsp cloves, 1/8 tsp allspice. I used 1/2 cup pecans and 1/4 cup of chopped dates. I used a 398 ml can of pumpkin puree (14 oz) I am getting rave reviews. The sweetness is perfect for a muffin. Pumpkin is very good for people with digestive problems. The nuts and dates help too.

If I could give this recipe a 0 then that would be my choice in rating. These muffins aren't sweet and they don't taste like any pumpkin I've had. Don't waste your time or money on this recipe.

Made to recipe using sugar and spice topping. In 20 min, they were ready, moist and delicious. Not sweet at all which would be more like a cupcake and less like a muffin. I will make these again.

Slightly changed recipe worked out wellNovember 02, 2009 By jeremyhull
I made these muffins with a couple of slight modifications designed to make them a bit healthier. I substituted whole wheat, whole grain flour for white flour and substituted molasses for the white sugar in the recipe. I was on the generous side with spices and, in addition to the raisins I added about 1/4 cup of unsweetened coconut. I sprinkled a brown sugar/cinnamon mixture on top. The muffins proved popular when I brought them to a party and also with my family.

Excellent recipe, easy to make and easy to eat. One thing that I noticed that the recipe called for 1 can of pumpkin but it also said 1 lb. Well my can is 2 lbs so I made a double batch right away. Maybe not everyone weighs their pumpkin Thank you Marg from PEI, Canada

These muffins were a breeze to make. I did bake them exactly as the recipe calls which in my oven was perfect. (unlike another rating comment) However they didnt satisfy the sweet craving we had. I did not add raisins...which if I did over I definately would AND I would highly recommend the cinnamon/sugar on top. In fact we melted butter and added more after we tasted them. I would definately tell you to seek another recipe if you want pumkin muffins. However, we are going to enjoy these with a glass of milk in the morning!

Thanks for all the previous reviews as it helped my daughter and I make this recipe. The smell was great and the taste was okay, but they definately need much longer to cook than in stated instructions. We ended up baking them for at least 40 minutes (until the toothpick came out clean), but after letting them cool a bit, they still seemed under-cooked.

When I made this recipe for the first time I made a mistake by using condensed milk instead of evaporated milk. Deliciuous!!! Just keep the regular sugar down and you will get the yummiest muffins ever. Also works in cake shape.

I was a bit hesitant to make these since there were a couple of negative reviews, but I'm glad I did. I made a batch last night, and loved them, so I've got a double batch in the oven to take to work tonight. I think, had I not set out and measured my ingredients before I started, I'd be writing a negative review, but since I'm a bit OCD, they turned out well! The ingredient list calls for ginger and nutmeg, but the instructions don't tell you to put it in-- this could be where the bland muffins came into play. Read thoroughly and set out ingredients ahead of time, and these muffins will be delightful! Also, I used my own pumpkin puree- 2 cups, instead of canned and it came out wonderfully.

I made this recipe and actually added a little more spices then it called for and they were still somewhat tasteless. The instructions, an oversight I'm sure, never says when to put in the ginger and nutmeg. If I were to make these again I would increase the spices especially the cinnamon.

I have made many a muffin before and many pumpkin recipes, but this was the worst I have ever made. I had to cook twice as long, and they still weren't done in the middle, and they had little taste. Very disappointing.

Very moist and flavourful. I used regular milk instead of evaporated and it tasted just fine. I think if I was to make it again I might add pecans AND raisins, because it needs a little more texture. A+.

As I was looking for a pumpkin muffin recipe, I read the ingredients and thought it should be quite good. Then I read the first review of the recipe and was confused. I decided to trust myself, since I am usually a good juged of recipes and I did 3 batches. It turned out SUPER. They are moist and very flavorful. My kids loves them! (they are usually very picky). 4 Guys were doing renovations on my house and I gave them some and them ravished them. My husband who does not eat anything related to pumpkins, ate and loved them. I did substitute the nutmeg for cinnamon (total 1.5 tsp of cinnamon). No nuts or raisins...because my kids would not have eaten them. Only cinnamon sugar on top. Try it, it's really a good recipe
