I can't bake to save my life and I have now made it twice and it is amazing. I initially found 1 cup of sugar too sweet. A half a cup is fine and that's with using sugar free jello. Also keep an eye on it as an hour might be too much.

I had some extra frozen rhubarb and wanted something easy to make. I came across this recipe and decided to try it. It was outragiously good. I didn't have any white cake mix so I used Lemon cake, I also used sugar free strawberry gelatin and it came out very tasty. I took it to work and they loved it. I served it with vanilla ice cream. Now I want to make it again for a gathering I am going to. Thank you for making this recipe available.

I tried this for a seminar lunch dessert and everyone loved it even if I reduced the ammount of sugar. I would give it 5 stars. It was excellent and a very easy bake.

In this recipe, I used strawberry cake mix, 3/4C. Splenda, 1# of frozen rhubarb and raspberry jello (it's all I had). Turned out great! But I used the jello only because of the tartness of rhubarb. When I use other fruit like blueberries, blackberries or peaches, for example, I omit the jello. This cobbler-like cake is a favorite of my husband's so I fix some variation of it often. The water can be substituted with a can of diet pop, orange for instance or even Diet cola. It's hard to ruin this dessert and talk about easy!

I just baked this today, after going on line to find a Rhubarb cobbler recipe...it was so easy to make and so good, its a keeper for me. only thing i did different was add some frozen straberries ( thawed) to my dismay i only had about 3 cups of rhubarb in the package i had got from the super market, so i just make up the rest by adding 2 cups of berries. bake time was perfect, i used a 10x10 baking dish, cause i didn't have the size stated. even hubby whom don't care for the sour rhubarb liked this.

This was so easy to put together...I had all the ingredients in my cupboard. My family usually cringes when I mention using the rhubarb from our garden, but with this recipe they all agreed that this is the only way they want it prepared. They are not wild about rhubarb pie.....But, This is a definate winner. I served it warm with vanilla ice cream and it was delicious. Almost had a cherry flavor... I took it out at 55 minutes as the top was getting a little too dark. (My oven cooks a little hot). This is not a real pretty dish but a keeper due to ease and taste.
