Based on previous reviews about too much liquid, I added an additional 1/2 cup of rice, and since I didn't want merangue, I used the whole eggs. Just as a personal preference, I added about 1/4 teaspoon of cinnamon at the end. My family loved it!

I was raised on rice pudding baked with raisins. I love this dessert because it is easy to make and easy on the waist. This recipe has all of the correct ingredients but the milk needs to be cut in half. Only one cup.. not two. Also, you can get by with only one egg yolk... for those trying to cut the fat to 5 grams of fat for the entire dessert instead of 10 grams of fat. Another hint to get the rice pudding just correct is to do your heating in the microwave. If you are like me heating milk on the stove is a way to mess up a pot so what you want to do is cook your rice how ever you want. Mix all of the other ingredients in a separate bowl. When rice is done add the rice to the liquid and microwave for 5 mins. This will help you absorb the liquid into the rice and taste the rice pudding before you bake. I usually end up adding a little more nutmeg.. etc to fit my taste. Also this will cut your baking time down to no more then 30 mins.

way too much liquid, so I stirred it up and put it in for another 25 minutes, we shall see. Perhaps the rice should have been aldente so soak up more juice? Or add more rice or less milk next time. Well its done, another 25 minutes did the job, is firm now. I made with a mixtue of brown and white rice and also used sour milk, cause I always heard it is good for cooking ... anyway, its ok. Next time I will not use sour milk

I made the recipe and it's a runny mess. There's no information as to how long to cook or beat ingredients. I gave it 10 minutes or more on each, and it still didn't work.

This is a great recipe. The rice pudding was delicious. My daughter has tried several rice pudding recipes & none of them would thicken but this one hit the spot. The next time I make it I will triple the recipe. My daughter & I ate it all while sampling it. I used rice that was cooked earlier & was cold when I added the other ingredients. I highly recommend using this recipe but follow the directions carefully.
