Tex-Mex Mac 'n Cheese

At first I was going to make cheeseburger Mac & Cheese, but after looking online I came across this recipe and decided to go with it. I used Velveeta Shells and Cheese, cooked my hambuerger meat with an onion and garlic, used 1 can of Southwestern Style Corn and 1 can of Rotel. We thought it was great! And very easy and quick!

You totally lose the taste of the mac n' cheese with the tomatoes and tomato paste. I'd probably omit the tomatoe paste if I were to do this again and instead of box mac n' cheese, create a simple mac with elbow noodles milk and cheddar before adding to the ground beef mixture. For a quick meal and large family with simple tastes - this is fine.

I made the recipe, as suggested with the rotel, and the only ingredient that I left out was the green pepper. We didn't have any peppers. It wasn't gross, just not as tasty as I hoped. As I began making it, I wondered about combining corn with pasta. If you like that kind of thing, you might like this. If not, then steer clear.

Now I'm not sure why you wanted to call this Tex-Mex, as to just where is the Mex, I ask you? I was cruising around sites looking for something new to do with a pound of hamburger, as one does get so bored making the same ole things, and was looking to find different and tasty and I found it in this recipe! I did change one minor aspect of the recipe, instead of a box of mac'n'cheese, I made home-made. I added 1 cup elbow macaroni to boiling water, let it cook for 7 to 9 minutes, drained the noodles and while they were draining, I cooked in the pan 2 tblsp. butter, 1/8 - 1/4 cup milk and 1 cup (approx.) of cut up velveeta pieces, let that melt up and added the noodles, stirred and added to the tex-mex meal. This was absolutely delicious! Leftovers were microwaved with added milk and tasted just as good as the first night!
