Curried Zucchini Soup

Excellent! The biggest problem with this soup is that it is so good, you may not want to share it. I almost ate the entire batch myself, however in my defense I did half the recipe since I did not have enough zucchini for a whole batch. The only other change I made is that I added a lot of fresh ground black pepper since I love black pepper. I did use store bought chicken broth, but I did not add any additional salt to the soup. Oh, so good, and simple. This will take the place of my butternut squash soup at Thanksgiving. I doubt that most people will realize that it is zucchini if I don't tell them.

I added some celery to get the salt as suggested by another reviewer and put some basil in it. I thought it was quite good that way. I also let it sit awhile after I puree it, I think it got thicker.

While I appreciate the simplicity of this recipe, I felt that it needed a LOT of salt to bring out the flavors (and I'm not a huge salt person). However, it is very simple, fast and tastes great once seasoned. I garnished it with a jumbo steamed shrimp and parsley and it was a hit!

If you love curry, you'll want to make this totally healthy, great for dieters and non-dieters alike soup. Nice light taste. Great way to use up your garden zucchinis. I froze leftover in one cup baggys to take to work for lunch. Freezes great.
