Sausage And Tortellini Soup

I live in a small surfing/fishing village just North of Puerto Vallarta and I sell soups at our weekly Farmer's Market. One tiny sample tester the people are sold. I saw people later in the week, after making it the first time that I didn't remember selling to and they would stop me to tell me how amazing it was and asked when I was making it again. I just finished a pot tonight for the market tomorrow. I did change a few things (I never follow a recipe really) like I use Chayote instead of Zuchinni as it stays firmer and I use Four Cheese Ravioli from Costco, one per serving since they are so huge. Presentation is gorgeous too. This one is a definite keep!!!

I used a spicy sausage and all the other ingredients as directed. I did add the wine when I put the sausage back in and I then added the veggies and let that all saute for a min or two before adding the beef broth and the spices. It was fantasic! My family loved it. My daughter who is not a fan of tortellini was hoping for leftovers. Great mix of flavors.

This recipe has definite possibities but MUST have an ingredient typo! The previous three, 5 star reviews must have seen a different ingredient list. 2 TABLESPOONS of DRIED oregano and 2 TABLESPOONS of DRIED basil? Once the herbs hydrated in the broth it was like loose tea floating on the surface. I skimmed it off but the flavor was already too intense (and my family likes full-flavored dishes!). Try 1/2 TEASPOON of each herb. I may try this dish again with adjusted seasonings.
