Strawberry-Pecan Cake

I made a variation of this recipe without the pecans (thought they would be strange), but for some reason my attempt didn't so much turn out as a cake but instead it was about 1/2 an inch of cake on the bottom and 1.5 inches of gelatinous substance above the cake. This was my dessert for christmas so I was really disappointed. I thought it was going to be terrific (although the icing was amazing! I'd love to try it on a chocolate cake). Can someone tell me what I might have done wrong? (Because i'd really like to try it again to get right.) Thanks, Trixie

My 3-year-old daughter requested strawberry cake for her birthday. I found this recipe, and I decided to make cupcakes...I used a healthier, gluten-free cake mix (without all the bad stuff that Pillsbury & Betty Crocker put in their cake mixes), eliminated the pecans, and it yielded 2 dozen incredibly delicious cupcakes!!! For the icing, I was blown away that this recipe called for 5-6 cups of powdered sugar... I researched other cream cheese icing recipes and found one that called for 2 cups of powdered sugar with 8 oz cream cheese + 1/2 cup of butter + vanilla. I decided to leave out the strawberries. It was so incredibly delicious and really sweet. I can't imagine what 5 or 6 cups of sugar would have tasted like... The cupcakes were a huge hit among kids & adults!!! Thanks for the recipe.

When I was in Louisiana a few years ago, I had my first strawberry cake -- made by a Creole woman. It was incredible and I've been searching for something like it for a while. This is the closest thing I've found. Wonderful! (I did get confused though with the recipe. Make sure to put dry cake mix and dry jello mix with the other ingredients in the recipe. Don't use anything from the directions on the box for the cake or the jello.)

My daughter in law treated me to this in a tea room in N. Carolina and I went on the internet to get the recipe. Served this to the members of my garden club and they loved it. I had to give copies of the recipe to several people. It was easy and everyone enjoyed. I will definitely make it again.

I TRIED THIS CAKE FOR THE FIRST TIME ON THANKSGIVING,AND I WOULD HAVE TO SAY THIS IS ONE OF THE BEST CAKES I HAVE EVER TASTED.I HAD TO CALL FAMILY MEMBERS OVER TO HAVE SOME SO I WOULD NOT EAT THE WHOLE CAKE MYSELF.

This is the best cake recipe. However, in the preparation directions, it never mentions to add the oil therefore I overlooked it. Otherwise, it would have been awesome.
