I added some cornstarch in a small amount of water at the end of the cooking time and stirred until the liquid thickened a bit. Then I served over pasta with shredded parmesan cheese. It was very good. We paired it with a shiraz wine.

Great side dish -- excellent with Herb Crusted salmon over baby greens (Bon Appetit, Oct 2005). Prep of salmon, greens, spices, veggies took about 15 - 20 minutes; cooking time took another 15 - 20 minutes. Since, my husband and I both work, this fits our lifestyle and palate quite well! Thanks!

This recipe was ridiculous! It was way too busy and the combination of herbs just didn't do anything for me. It didn't horrible but not great either by a long shot. Plus, I couldn't eat the tomatoe wedges, that was the first time I attempted to eat hot tomatoes and that was no good plus, the garlic was a not-so-wise addition. I am happy I tried it out so now I know to stick with my original way which is to simply sprinkle Adobo and black pepper to taste. Sounds like nothing but believe me, those two ingredients add so more flavor and spice than all that mess! Never again....
