Fresh Tomato Sauce

I was a little apprehensive about a sauce that was not cooked, especially since I do not like fresh tomatoes. This sauce was amazing! It was fresh tasting and reminded me of something I would get at a nice restaurant! Full of flavor :) I did peel the tomatoes (I used Roma) first and added some red pepper for a little kick. Will definitely be making again! Thank you for a great recipe!

When I saw that it was a ""raw"" recipe I was skeptical, but this was REALLY delicious! I didn't have chopped fresh basil, I used the tube of fresh basil you get in the grocery dept and threw in a tablespoon of ""pesto"" sauce that I got from Costco. I used four hothouse tomatoes that were getting soft and needed to be used before they went bad. The sauce was thick, fresh and delicious! There is a little left over that I think will taste even better tomorrow after marinating tonight, over some chicken. YUM!

So I had a package of tomatoes and some fresh herbs sitting in the fridge that I didnt want to go bad, so, I looked around for a quick simple pasta sauce that I could whip up really quick for a fast lunch. This one caught my eye mainly because it included all of the ingredients that I had plus it sounded really easy to make. To my surprise however it turned out very good. Very flavor full for the small amount of ingredients. I added some fresh parmesan just for a little something extra. Not sure if it was the cheese but this sauce had a very creamy texture to it which was a nice surprise. I made it to get rid of some tomatoes before they went bad, no I find my self buying tomatoes just to make it again. Very good!!!
