The combination of sausage and cauliflower makes for a delicious main meal, especially when the weather starts to turn a bit cooler, and you want to start making warming casserole dishes. It's also a breeze to prepare.
The sausage and onions are briefly sautéed, then they're tossed with the seasoned cauliflower and roasted to perfection. A topping of sharp cheddar cheese finishes the dish beautifully, but you can use Parmesan if you like or Monterey Jack instead.
Serve with a tossed green salad or sliced tomatoes for a mostly hands-off weeknight family meal.
Ingredients

2 tablespoons olive oil, divided, more for the baking dish

1 large head cauliflower, broken into small florets

1 teaspoon Creole or Cajun seasoning

1 to 2 tablespoons coarsely chopped fresh parsley

1/4 teaspoon freshly ground black pepper

Kosher salt, to taste, optional

1 medium onion, coarsely chopped

12 ounces smoked or uncured sausage, such as andouille, sliced into 1/2-inch rounds

1 to 1 1/2 cups shredded sharp cheddar cheese
Steps to Make It

Gather the ingredients.

Heat the oven to 425 F. Grease a 2-quart baking dish with some of the olive oil.

In a large bowl, toss the cauliflower with the seasoning blend, parsley, pepper, and salt, if using. Set aside.

Heat 1 tablespoon of the olive oil in a skillet over medium heat. Add the onion and sausage. Cook, until browned, about 4 minutes.

Add the sausage and onion mixture to the cauliflower. Toss, drizzling with the remaining tablespoon of olive oil. Blend all ingredients thoroughly.

Spoon the mixture into the baking dish, and bake for about 25 to 30 minutes, until the cauliflower is tender and browned. Stir once or twice during the roasting time.

Sprinkle the cheese over the top, return to the oven, and continue baking for 3 to 5 minutes, until the cheese is melted.
Variations
- If you don't have Cajun or Creole seasonings, you can use a combination of cayenne, smoked paprika, and garlic powder, along with herbs such as ground thyme, basil, or oregano.
- You can also use Old Bay instead of Cajun or Creole seasonings if you have that on hand.
- Feel free to use turkey or chicken sausage instead if you want the dish to have a little bit less fat or if you prefer the taste.
- This recipe would also be good with broccoli and sausage instead of cauliflower, or a combination of both veggies.
